Dadih merupakan produk susu kerbau dari daerah sumatera barat yang difermentasi secara alami selama 24-48 jam pada suhu kamar dalam wadah bambu. olahan susu dadih kerbau sangat diminati karena manfaat kesehatannya, tingkat kontaminasi bakteri, terutama escherichia coli, harus diperiksa. penelitian ini bertujuan mendeteksi adanya bakteri escherichia coli pada dadih yang diproduksi di home industry kota padang panjang sumatera barat. penelitian ini dilakukan berdasarkan metode cross sectional. deteksi escherichia coli menggunakan eosin methylene blue agar (emba) dan data hasil pengamatan dan dianalisis secara deskriptif. hasil penelitian ini menunjukkan bahwa pada pada 6 sampel olahan susu kerbau (dadih) menunjukkan hasil negatif escherichia coli. sampel dadih home industry di kota padang panjang sumatera barat tidak menunjukkan adanya kontaminasi escherichia coli sehingga dapat disimpulkan bahwa dadih dari home industry kota padang panjang tidak kontaminasi escherichia coli. kata kunci: dadih, escherichia coli, home industry.



Abstract

Dadih is one of the processed buffalo milk originating from the province of West Sumatra which is naturally fermented in a bamboo container at room temperature for 24-48 hours. Processed buffalo (dadih) milk is in great demand by the public because it is beneficial for health, so the level of bacterial contamination, especially Escherichia coli, must be considered. This study aims to detect the presence of Escherichia coli bacteria in dadih produced in the home industry of the city of Padang Panjang, West Sumatra. This research was conducted based on the Cross sectional method. Detection of Escherichia coli using eosin methylene blue agar (EMBA) and the results of observational data and descriptive analysis. The results of this study showed that 6 samples of processed buffalo milk (dadih) showed negative Escherichia coli results. The home industry dadih samples in the city of Padang Panjang, West Sumatra did not show any Escherichia coli contamination, so it can be concluded that the curd from the home industry in the city of Padang Panjang was not contaminated with Escherichia coli.
